So after a couple of weeks of fiddling and a call with the owner of Pine64 EU (who was very helpful and patient) I finally got it back up and running.
Apparently the problem was updating Manjaro using Pamac as it installed updates for the wrong architecture... After flashing a new version of Manjaro to an SD and using the 'reset' button under the backplate of the laptop it booted once more.
About to try updating with Pacman this time. Wish me luck.
