In the end, I've circled back to Mint.
Honestly, I could have used any of them, but all three suffered from the same annoyance to one degree or another: high DPI screen oddities.
Apps not scaling right; some text looking fuzzy; VMs forgetting resolution or fractional scaling settings...
In the end, Mint (the only non-Wayland one) seems to have the fewest annoyances.
