The key thing is consistency. You don’t want chewy chunks in the egg, so the bacon has to be basically overcooked, then blitzed in a blender to get very fine ‘bits’ that retain an intense smokiness. That will permeate the fat in the yolks.
After chilling, you want to set them out so they can come back up to slightly below ambient.
