You can double-click the arrow, in order to have the expanded state remembered, when you open the menu again later.
I've discovered this feature due to my malfunctioning mouse - unintentional double-click.
Also, see 2nd pic, there's a #bug in the #Ubuntu (24.04 LTS) #Gnome UI - the container doesn't enclose all of its contents, when the expanded state is persisted for more than 1 sub-menu as described above.
