Putting this behind a content warning, because I'm sure most people don't care to read my complaints.
WTF Ubuntu, here's another annoyance you might encounter.
If you install Ubuntu without a secure password the installation will proceed normally and when you reboot you can't log in. Even if you choose automatic login, there's no account created.
I booted into the live USB again and chrooted into the installation.
Now I was able to boot. There was only a disabled ubuntu account.
