Now added the sugar. We normally bake it first, to ensure that it's absolutely completely 100% dry before adding, because even the tiniest amount of moisture can ruin a chocolate batch, but Kate wants to try a batch without that step because pure white sugar apparently isn't scientifically able to retain moisture anyway...
I personally feel this is a risky step to skip, but hey-ho!
We've used various sugars in our batches. This time we've gone for white caster, because of the finer grain.
