I only managed to get one photo while tempering. You basically can't stop keeping it in motion else you lose the temper, and you've to nail the temperatures at each step else you lose the temper there too.
For dark, you've to take it to 45c to break up all existing crystals, then rapidly down to as close to 28c as possible without going under, while keeping it in full motion, and then back up as close to 31c as possible with minimal motion.
I got this batch to 45.1c, 28.2c, and 30.8c.
