It's 25c in this kitchen, which is a little hotter than I'd like it for tempering (you've to hit specific temperatures while mixing the chocolate and it's just easier to do that at about 21c), but it's also 45% humidity which is just about perfect so we're giving it a go anyway!
Fridge shelves are all levelled, moulds are all cleaned and polished (we live in a hard water area so keeping the moulds free of water spots is a pain), and this chocolate has been maturing for a week. 😋
Photo of the chocolate after a week of maturing. It isn't tempered yet, so blooms like this when it dries. After tempering it'll be lovely and shiny!
