TIL that I probably don't want to use "echo" in powershell.
The commands in the first screenshot creates the completely unuseable mess in the second screenshot.
Powershell prompt with two different ways to echo text into a textfile. While seemingly very similar, the first line writes ascii text, the second one writes utf-16LE by default.
The result of writing both ascii text and UTF-16 text into the same file, an unuseable mess. File was created using the commands from the other screenshot.
